Recipe: Penne with Asparagus & Peas in Pistachio-Mint Lemon Sauce

Today I'm sharing my favorite recipe for a light, summer pasta that tastes perfect when using the freshest ingredients. I used this recipe from Rachael Ray, adding fresh peas.

Toasted and ground pistachios add such a great crunch and enhance the taste of this pasta. I was excited to use my home-grown mint leaves! and I paired the dish with a store bought fresh bread. It was like summer in a bowl :)
