Recipe: Prickly Pear Sangria

Sometimes, after spending the day with two little ones, you need a drink immediately after their bedtime. The thought of this prickly pear sangria helped me get through yesterday... and it was just as good as I had imagined.

Prickly pears are in season right now, and are so easy to work with. Their shell is coarse and cactus-like, but the ripe ones are bursting with soft fleshy fruit on the inside. They are blood red and juicy... perfect to squeeze into any cocktail.

We paired this drink with kale & black bean tacos, and a side of seasoned heirloom tomatoes. YUM.
